Non-Dairy Tapioca Pudding

Serves 4

Ingredients
2 cups (500mL) milk* or fruit juice 
¼ cup tapioca
sweetener to taste (white sugar or xylitol)
¼ teaspoon pure vanilla essence (optional)*

Method
Soak tapioca in milk or fruit juice in a small pan.
Place over a medium heat and bring to the boil  Reduce heat to medium-low and cook, adding sugar and vanilla, stirring occasionally until mixture begins to thicken. *Do not allow to burn.
Spoon mixture into parfait dishes and place in refrigerator for 1-2 hours to set.
Serve garnished with choice of fruit, cream* or both!
