Vegetable Rice Spiral Pasta with Spicy Vegetable Ragout

Ingredients
¼ cup olive oil
1 small onion, peeled and sliced
1 medium-sized green pepper, seeded and finely chopped
1 small eggplant, chopped
2 medium-sized tomatoes, peeled and finely chopped
½ stalk celery, sliced
1 vegetable stock cube* (optional)
½ teaspoon fresh thyme leaves, finely chopped
2 bay leaves
¼ teaspoon sambal oelek* (or to taste)
¼ cup water
¼ cup dry red wine*
150g snow peas, sliced
½ cup black olives*
2 green shallots, chopped
1 packet Orgran Vegetable Rice Spiral Pasta (or pasta of choice*)
Method
Heat oil in pan, add onion and pepper, stirring until onion is
soft.
Stir in eggplant and tomatoes, cook over low heat for 5 minutes.
Add celery, stock cube, thyme bay leaves, sambal oelek, water and
wine.
Bring to boil, simmer uncovered for 10 minutes.
Stir in snow peas, olives and shallots. Keep warm.
Discard bay leaves.
Add Orgran pasta to large pan of boiling water and cook according to
instructions on the packet. Drain well.
Toss pasta with vegetable mixture and serve immediately.

sambal oelek - minced chillis and salt (but may also contain
tamarind, soy oil, MSG, etc.)
