White Sauce (made with soy milk)

WF = wheat free
GF = gluten free
DF = dairy free
EF = egg free
SF = soy free
CF = corn free
NF = nut free
FF = fish free
V = vegetarian

Makes 2½ cups.

Ingredients
2 tablespoons canola oil
5 tablespoons unbleached flour
1 cup water or vegetable stock
1 cup Pureharvest Soy Milk
½ teaspoon sea salt
pinch white pepper
Method
Heat oil in a small saucepan over medium heat. Add flour and
stir for a few minutes.
Bring water or stock to a boil and slowly pour into flour/oil
mixture. Whisk vigorously.
Blend in soy milk. Reduce the heat to very low or place a heat diffuser under the pan.
Cover and simmer slowly for 10-15 minutes. Season to taste.
Sauce will thicken as it cools and is best served
immediately.
