Chicken Nuggets

Serves 4.
Ingredients
1 skinned chicken breast fillet (about 250g)*
2 tablespoons white rice flour*
2 tablespoons gluten free/wheat free rice crumbs*
sunflower or safflower oil for cooking
Method
Wash the chicken fillet and pat dry with paper towels.
Cut chicken into (approx) 2 cm cubes.
Place the white rice flour and rice crumbs in a plastic bag and shake to
mix.
Add the chicken cubes to the bag and shake until well coated. Remove
and shake off excess crumb mix.
Deep fry or shallow fry the nuggets in pan on a
medium-to-high heat until golden brown.
Serve with vegetables.
Options
Why not serve the Chicken Nuggets with your choice of suitable
dipping sauce?
Hints
If you wish you could add a little fresh crushed garlic for taste
into the oil (optional.)
