Stuffed Butternut Pumpkin

WF = wheat free
GF = gluten free
DF = dairy free
EF = egg free
SF = soy free
CF = corn free
NF = nut free
FF = fish free
V   = vegetarian

Ingredients
½ butternut pumpkin, seeded and rinsed well.
1 tablespoon extra virgin olive oil
1 brown onion, finely chopped
½ cup cashew nuts*, chopped
1 cup cooked basmati* rice or buckwheat* rice
chopped parsley for garnish

Method
Pre-heat oven to 180
° C.
Place pumpkin on a baking try and brush with oil.
Place pumpkin into oven and bake for approximately 40 minutes.  Remove from oven but remain temperature at 180
°C.
Place onion in frying pan over medium-to-high heat and saute, add raisins, nuts and rice.
Fill cooked pumpkin with rice mixture.  Reheat in oven for a few minutes.
Garnish with parsley and serve.
